Mastering Pasta from Scratch

Fresh pasta comes together quite quickly. Mixing and kneading the dough takes approximately 15 minutes, then you let it rest for another 20 minutes. You can use this resting time to pull together the ingredients for the pasta sauce.

Once you’ve made your pasta, you can cook it right away, dry it, or freeze it for later. Keep in mind that homemade pasta cooks much more quickly than the dried pasta you buy in stores. Give it about four minutes in salted boiling water.

So let’s make some pasta.

Ingredients

  • 42 dkg hard flour
  • 18 dkg soft flour
  • 35 dkg eggs (6/7 eggs)
  • 1 teaspoon salt
  • drop of oil

Preparation

Combine the flour and salt with a fork in a medium mixing bowl.

Make a deep well in the middle of the flour and crack the eggs into this well.

Mix in the eggs with the fork to combine. As you mix the eggs, start gradually pulling in flour from the bottom and sides of the bowl. Don’t rush this step. You will see the mixture becoming the soft dough.

Take the dough on the clean counter and start folding the dough continuously. Gradually it firms up.

Once the dough is firm enough, slice it into 2 pieces, rap in plastic rap and let it rest for 20 minutes.

Take the dough and flatten one piece of dough into a thick disk between your hands and roll it until it is flat enough to go through the pasta machine.

Begin changing the settings on your machine to roll the pasta thinner and thinner. If you have additions for your machine you can cut the pasta while rolling it, or you can just do it manually.

Once the pasta is cut, let it dry for few minutes, and its ready to be cooked.

To cook the pasta immediately, bring a large pot of salted water to a boil, and cook the pasta until al dente, 4-5 minutes. If you wish to freeze the pasta, just let it dry and store it into a small plastic bags.
